Ah, weekend mornings. The perfect time to enjoy a delicious homemade breakfast! This is one of my go-to recipes for a quick, delicious way to start the day. It’s also a recipe that I likely have all ingredients on-hand! And because it’s a one-skillet dinner, cleanup is a breeze- something especially important for those lazy weekend mornings.
1 pound ground turkey
2 tbsp. breakfast seasoning
1 green pepper, diced
2 sweet potatoes, cubed
Red pepper flakes (optional)
- Sautee green peppers until tender. Season ground turkey with breakfast seasoning and add to skillet. Cook until browned.
- Add potatoes to skillet, cover and cook until potatoes are tender.
- Make four openings in the pan and crack eggs into openings. Cook eggs to your own preference.
- Sprinkle with red pepper flakes.
